Hydroxyethyl starches are partially substituted poly(2-hydroxyethyl)ethers of waxy maize starch or potato starch, which primarily consist of amylopectine. The type of hydroxyethyl starch is defined by 2 numbers: the mean molecular weight (Mw) and the number of hydroxyethyl groups per anhydroglucose unit expressed as the molar substitution (MS). Hydroxyethyl starch is also characterised by the number of hydroxyethyl groups located at the C2 group over the number of hydroxyethyl groups located at C6, expressed as the C2/C6 ratio.
